Taco Salad

Ingredients:

1 package grape tomatoes (cut in half)
1/2 cup green olives (cut in half)
1 Package of Hearts of Romaine bagged salad
3/4 cup shredded cheddar cheese
1 lb. ground beef (cooked and drained of grease)
1 package of Taco Seasoning
1 cup Catalina Dressing
1 Bag of Nacho Cheese Doritos


Directions:

Season the ground beef according to the directions on the seasoning packet. Drain the beef on a plate lined with paper towels. Place the beef in the refrigerator to cool. Once the beef is cooled, pour the bagged salad into a large bowl, add halved tomatoes, halved olives, cooled beef, and catalina dressing. Stir until well mixed. When ready to serve, spoon into bowls and add a handful of crushed doritos to the bowl. If you add the doritos before serving the salad will make the doritos soggy. Enjoy!!!

Smoked Swiss Stuffed Mushrooms

Ingredients:
1/4 cup shallots, minced
1 Garlic clove, minced
1-8 oz. pkg. whole white mushrooms
1/4 cup flavored bread crumbs
2 tbs. fresh parsley, chopped
1/2 tsp. salt
1/2 tsp. black pepper
2 oz. Smoked baby swiss cheese, diced
3 tbs. Olive oil
Aluminum Foil

Directions:
Preheat oven to 400 Degrees. Heat a small nonstick skillet over medium-high heat. Coat pan with cooking spray. Add minced shallots and minced garlic. Saute for 2 minutes or until tender. Place shallots mixture in a medium bowl and set aside. Remove stems from mushrooms, chop stems. Add chopped stems, bread crumbs, parsley, salt, pepper and swiss cheese. Add olive oil, stir well to combine. Spoon about 1 tsp. filling into each mushroom cap. Arrange mushrooms, filling side up, on a baking sheet lined with foil. Bake for 20 minutes or until filling begins to brown and cheese melts. Serve Warm.

Awesome Meatloaf

1 1/2 lbs. ground beef
1 slice bread (broken or chopped finely)
1 egg
1 small vidalia onion, finely chopped
1 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons ketchup
1/2-2/3 cup whole milk or half & half

Sauce
4 tablespoons apple cider vinegar
2-4 tablespoons dark brown sugar, packed firm
1/2 cup ketchup

1: Combine meat loaf ingredients and place into a loaf baking dish.
2: Smooth out top
3: Combine sauce ingredients in separate bowl, pour on top and sides of meatloaf
4: Bake at 350 degrees about 1 hour to 1 hr 15 minutes or until done.


The recipe should be "plump" from the milk or half and half
It should not be runny.
